Exploring the World From Bilbao is an innovative, creative space where travellers will find a wide variety of quality products with a very broad selection, catering to all the different demands of the passengers who travel through this airport. In this space, the acclaimed chef Ricardo Pérez proposes a unique journey through world cuisine, with dishes such as vegetable or chicken gyoza, tuna tataki with soy sauce, citrus and ginger, and hot pork, without loosing sight of the essence of local gastronomy. The menu also includes a selection of pintxos from the area: the classic “Gilda” peppers, olive and anchovy skewers, the “trainera” with ham and seafood, and the emblematic hake taco with roasted peppers. There is also a selection of hot and cold sandwiches, made with pan de cristal ciabatta-style bread and delicious combinations of ingredients such as Iberian ham shoulder with Camembert, salmon with wasabi mayonnaise, and raff tomato with tuna belly.
